These fluffy honey pancakes are topped with rich clotted cream or crème fraîche, your favorite jam, and a generous drizzle of honey. Whipped egg whites give the pancakes their light, airy texture while honey brings natural sweetness to every bite.

How to Make Honey Pancakes
1. Whip the Egg Whites
Separate the eggs and place the whites in a clean mixing bowl.
Whisk the egg whites until soft peaks form. This extra step helps create exceptionally light and fluffy pancakes.
2. Make the Batter
In a large bowl, combine the flour, baking powder, salt, and sugar.
Create a well in the center and add the egg yolks. Gradually pour in the milk while whisking until you have a smooth batter.
Stir in the melted and cooled butter.
3. Fold in the Egg Whites
Gently fold the whipped egg whites into the pancake batter.
Avoid aggressively mixing at this stage. You want to preserve as much of the air in the egg whites as possible.
4. Cook the Pancakes
Heat a nonstick skillet or griddle over medium heat and add a small amount of butter.
Spoon the batter into the pan to create pancakes of your desired size.
Cook until bubbles begin appearing on the surface and the underside is golden brown. Flip and cook the other side until golden and cooked through.
Repeat with the remaining batter.
Add the Honey, Cream, and Jam
Serve the pancakes while they're still warm.
Add a spoonful of clotted cream or crème fraîche and your favorite jam. Finish with a generous drizzle of honey.
For a little extra warmth, lightly dust the plate or pancakes with nutmeg, cloves, or pumpkin pie spice.
Then dig in.
Which Honey Is Best for Pancakes?
There's no single right answer, and that's part of the fun.
Different honeys can have remarkably different flavors depending on the nectar sources available to the bees.
A mild honey allows the cream and jam to take center stage, while a more distinctive varietal honey can become one of the dominant flavors of the dish.
Try making the same recipe with different honeys and see which one you prefer.
Why We Love Cooking With Honey
Honey isn't simply another sweetener.
Every jar represents an incredible process that begins with flowering plants and thousands of foraging honey bees collecting nectar.
It's also the product at the center of a beekeeper's livelihood.
That's why we believe one of the simplest ways to support beekeeping is also one of the most delicious:
Use more real honey.
Put it in your recipes. Drizzle it over breakfast. Experiment with different harvests and varietals. Share it with friends.
Creating more demand for honey creates more opportunity for the people who dedicate their lives to keeping bees.
Make Your Next Stack a Honey Stack
Whether you're making breakfast for the family or putting together an indulgent weekend brunch, these pancakes are an easy way to put honey center stage.
Pile them high. Add the cream. Spoon on the jam.
And don't be shy with the honey.
Enjoy the harvest. Support beekeepers. Grow the mission.
